One of my all time favorite dishes. Nettles purify the blood, lemon stimulates digestion and pine nuts are the best for treating the savory-craving.
Ingredients:
- 1 small sweet yellow onion
- 1/8 tsp rock salt
- 1/4 tsp mustard seeds (optional)
- 1/4 tsp coriander seeds
- 1/4 tsp fresh ground black pepper
- 1/2 – a whole lemon
- 2 tb. olive oil
- 2 Tbs. pine nuts
- 1 c Brown Rice
- 1/4 cup dried nettles
- 3 cups water
Instructions:
Sauté the seed spices in the oil until aromatic. Add onions and sauté until translucent. Next, add the brown rice and continue sautéing for another minute, continually stirring. Add water and nettles and bring to a medium boil. Separately, sauté the pine nuts and remaining ingredients. Remove brown rice when soft (sometimes I even drain my brown rice in a strainer to get out any extra water.) Garnish with black pepper, feta cheese and/or a basil pesto sauce & serve.
