Finely-Chopped Salad

From an Ayurvedic perspective, salads are cooling and can be hard on the digestive fire if your digestion is already weak. That said, with good amounts of healthy oils, warming spices, and by finely chopping the greens, most people have no trouble digesting this favorite of American “health-foods.”

  • 1 head French baby lettuce
  • 1 small head radicchio, some arugula or French machet
  • 1/2 cup pitted Kalamata olives, sliced in half
  • 1 lemon or lime, juiced
  • 3 tablespoons olive oil
  • 2 tablespoons capers
  • dash of cinnamon
  • 1/4 tsp rock salt
  • Freshly ground black pepper
  • 1 cup sweet cherry tomatoes, sliced in half
  • handful of feta cheese (optional)

Toss the lettuce, olives, spices and cherry tomatoes. In a separate measuring bowl, whisk the lemon juice, olive oil and capers. Toss the dressing with the lettuce and use more salt and pepper to taste.
